Karela Sabzi
Karela Sabzi is unique , it has a taste which can be compared no other vegetable preparations and is relatively easy to prepare.
Ingredients
250 grams karela (bitter gourd)
1 sliced onion ( medium sized)
2-3 green chillies ( according to taste – can be avoided if you don’t like hot preparations)
1 tsp saunf (fennel powder)
1/2 tsp Haldi powder ( turmeric)
1 small kaccha Aam (green mango- aambi; easily available these dauys) – Chop into small pieces after removing the skin
1/4 tsp red chilli powder ( optional)
1 tbsp mustard oil or any other Healthy oil
Salt to taste
Method
Wash Karelas thoroughly, remove the end portions,
Cut lengthwise and remove seeds and slice into small pieces
Heat 11/2 glass of water add ½ tspn of salt and put the karela slices in the hot water, leave to simmer after covering with a lid for few minutes, when only partially cooked , strain the hot water and wash Karela in cold running water.
In a ‘Karahi’ or frying Pan heat oil, add jeera ( cumin seeds ) to hot oil whens seeds are ready add the Karela pieces , salt & Haldi powder; mix well on medium heat till karela pieces are crisp.
Add rest of the ingredients – namely, green chillies, onions, mango, red chilly powder and saunf mix well till all is crisp and ready, Serve Hot with Roti and Daal.
