Karela Sabzi
Ingredients250 grams karela (bitter gourd) 1 sliced onion ( medium sized) 2-3 green chillies ( according to taste – can be avoided if you don’t like hot preparations) 1 tsp saunf (fennel powder) 1/2 tsp Haldi powder ( turmeric) 1 small kaccha Aam (green mango- aambi; easily available these dauys) – Chop into small pieces after removing the skin 1/4 tsp red chilli powder ( optional) 1 tbsp mustard oil or any other Healthy oil Salt to taste MethodWash Karelas thoroughly, remove the end portions, Cut lengthwise and remove seeds and slice into small pieces Heat 11/2 glass of water add ½ tspn of salt and put the karela slices in the hot water, leave to simmer after covering with a lid for few minutes, when only partially cooked , strain the hot water and wash Karela in cold running water. In a ‘Karahi’ or frying Pan heat oil, add jeera ( cumin seeds ) to hot oil whens seeds are ready add the Karela pieces , salt & Haldi powder; mix well on medium heat till karela pieces are crisp. Add rest of the ingredients – namely, green chillies, onions, mango, red chilly powder and saunf mix well till all is crisp and ready, Serve Hot with Roti and Daal. ( Remember – only as many Roti as advised by the doctor). |




Karela Sabzi is unique , it has a taste which can be compared no other vegetable preparations and is relatively easy to prepare.
