Turkish Eggplant Salad

1 tsp salt to taste2-3 sprigs parsley,

chopped½ lemon’s juice

¼ cup olive oil1-2 cloves of garlic, minced

1 tomato

1-2 bell peppers (green/red/yellow)2 medium eggplants

Take a wide bowl and mix Olive oil, lemon juice  and minced garlic thouroughly in it, leave aside for 15-20 mins. Inthe meantime roast the eggplantsover fire or in an oven ( or Tandoor- if you have one) till they are soft, roasted tomatoes also go very well in the salad, even though they may be used raw. Peel the skin of roasted vegetables, cut them into cubes. Place the vegetables in the sauce and add parsley ( may use green Dhania leaves if you can't find parsley in the neighbourhood market). Sprinkle salt to taste and mix slowly with preferably a wooden spoon without crushing the vegetables. Serve together with your delicious meals to make them healthier and exotic.
